DARREN BURKE - Chef de Cuisine/ Patron
Darren was born in Scotland and moved frequently arond the UK as his father was in the Armed Forces. He lived in Northern Ireland and Germany, before his family settled in Lincoln. Early in his career, he spent a number of years working with an Italian chef from Puglia, an influence which is reflected in some of of his cooking. Before opening the restaurant, he worked in Verbier as Head Chef at Sir Richard Branson’s mountain retreat, The Lodge. Prior to that he also worked at Kasbah Tammadot in Morocco, another of the Virgin Limited Edition properties. Darren enjoys skiing but more importantly is a very keen cyclist, and takes part in a number of different sports across Europe over the summer months. He hopes to one day organise a sportif in the Val d'Hérens area. Watch this space…
ASHLEY BURKE - General Manager/ Joint owner
Ashley was born in Bermuda and moved to England when she was 5. She too has lived in various parts of the UK, including the south east, south west and midlands. She has a degree in Marketing and Events Management but her main passion is cooking and she holds a Masters in Culinary Arts Management. She has worked as a chef in a number of different roles from culinary schools to private households and super yachts. Before opening the restaurant she also worked in Verbier as Head Chef for luxury chalet company Ski Verbier before taking over as Head Chef at Le Farinet Hotel and Lounge Bar. Ashley now manages the overall running of the restaurant as she is the super organised one, but still spends the odd day back in the kitchen every now and then. She loves to ski, travel and do renovation and design projects in her spare time.
STEPHANE CLERC- Restaurant Manager/ Sommelier
Stephane is from the Valais itself and is our local knowledge guru. He has not only extensive experience working in hotels and restaurants in the Valais but has also worked on each level of winemaking, from the vineyard to the shop. He speaks French, English, and German. Before joining us as Restaurant Manager, he worked and lived in South East Asia for several months, where he spent much of his time in search for his number one passion - snakes!
